Assassin's Creed Valhalla // Apple & Oat Cookies

This Christmas is … a little different. I think everybody knows why that’s the case, so I won’t say anything else about it. The big C and the lack of snow are probably two reasons why I just can’t seem to get into the Christmas mood. My solution: rush headlong into work and when I’m done, relax on the couch with a good game.

Right now I'm mostly jumping back and forth between Immortals Fenyx Rising and Assassin's Creed Valhalla. The inspiration for today's recipe comes from the latter. After many hours in England, I ended up visiting Eivor's snowy home country again. While I was riding around pretty aimlessly, I stumbled upon a settlement - overgrown and dilapidated.

I love places that nature reclaimed, so I immediately started exploring. I had a growing suspicion what I might have found here and only moments later, Eivor confirmed it: These abandoned houses once were her village. The realization affected me more than I could have imagined, but at the same time the place was so peaceful and, thanks to the greenery everywhere, also really pretty - a bittersweet moment, befitting this year's Christmas.

The cookies today are mainly delicious, sweet and crispy, I would say 98.64%, but a fine bitter note can be tasted as well. Fun fact, these oat thalers are quite historically correct, the real Vikings had access to all the ingredients in this recipe. And I’m sure, if they could try my delicious cookies, they would have definitely made them!

100g oats

55g butter

25g dried apples

55g honey

  • preheat the oven to 175C top and bottom heat

  • cut the dried apple into small pieces

  • melt the butter in the microwave (bursts of 10sec)

  • mix all the ingredients together thoroughly

  • put tablespoons of the mix on a backing paper covered sheet pan

  • flatten the little piles, but keep them compact

  • bake for 10-12min till golden brown

  • let the cookies cool completely

  • Guten Hunger!
